French Quarter Salad Recipe
Yield: 2 portions

INGREDIENTS

  • 4 oz fresh arugula
  • 2 oz red and green peppers, small dice
  • 1 oz red onion, small dice
  • 1/4 cup candied pecans
  • 1/2 ripe red pear, julienne strips
  • 1 oz Danish blue cheese, wedge
  • 1 ripe tomato, unrefrigerated (per portion)
  • 1 pepperoncini (per portion)
  • 1 Kalamata olive (per portion)
  • 1/2 tbsp Italian parsley, chopped
  • 1/2 tbsp dill, chopped
  • 1/2 tbsp cilantro, chopped
  • 1 slice lemon
  • 1/2 tsp white truffle oil
  • 1 tsp balsamic vinegar
  • 2 oz Greek dressing

DIRECTIONS

  1. Assemble salad in order of ingredients.
  2. Prepare dressing as shown in the video. Combine Greek dressing in a ramekin, then top with balsamic vinegar and white truffle oil.
  3. Toss salad with dressing and serve.
