French Quarter Salad Recipe
Yield: 2 portions
INGREDIENTS
- 4 oz fresh arugula
- 2 oz red and green peppers, small dice
- 1 oz red onion, small dice
- 1/4 cup candied pecans
- 1/2 ripe red pear, julienne strips
- 1 oz Danish blue cheese, wedge
- 1 ripe tomato, unrefrigerated (per portion)
- 1 pepperoncini (per portion)
- 1 Kalamata olive (per portion)
- 1/2 tbsp Italian parsley, chopped
- 1/2 tbsp dill, chopped
- 1/2 tbsp cilantro, chopped
- 1 slice lemon
- 1/2 tsp white truffle oil
- 1 tsp balsamic vinegar
- 2 oz Greek dressing
DIRECTIONS
- Assemble salad in order of ingredients.
- Prepare dressing as shown in the video. Combine Greek dressing in a ramekin, then top with balsamic vinegar and white truffle oil.
- Toss salad with dressing and serve.
