Avocado Mayonnaise Recipe

• 2 whole eggs
• 2 egg yolks
1. Let the eggs and egg yolks sit at room temperature for about an hour.
• 1/4 tsp white pepper
• 1/2 tsp cayenne pepper sauce (adjust for heat preference)
• 2 tsp salt
• 2 tsp Dijon mustard (smooth French-style)
• 1 tbsp apple cider vinegar (champagne vinegar, red wine vinegar, or any acid of your choice)
• 1 tbsp fresh squeezed lemon juice
2. In a food processor or blender, combine the eggs, egg yolks, white pepper, cayenne, salt, Dijon mustard, vinegar, and lemon juice. Start blending.
• 1-2 cups avocado oil (room temperature)3. Slowly pour in the avocado oil while continuing to blend. Begin slowly, then increase speed as it thickens. Scrape down the sides as needed. Blend until smooth and creamy.
4. If too thin, add more oil to thicken. If too thick, add a little water or more lemon juice.
5. Taste and adjust seasoning with more salt, pepper, or vinegar as needed.
