Bananas Foster Waffle Recipe

Make this for a Sunday morning. Get up a little early. Make the waffle batter. Put it in the fridge. Knock out the banana’s foster. You’ve got breakfast in 30 minutes. You can also have a pan of bacon, ham, or patty sausage going if you want.

If you don’t like it, as thick as I’ve made it here, you can thin it down with some more lemon and orange juice. Or you could add a little bit of heavy cream, and you can make it a little bit saucier.

Waffle Batter

• 4 egg whites1. Separate the eggs. Whip egg whites to stiff peaks.
• 4 cups cake flour
• 1/2 cup cornstarch
• 1/2 cup sugar
• 2 tbsp baking powder
• 1 tsp salt
2. In separate bowl, mix dry ingredients.
• 3 cups milk
• 8 oz melted butter
• 4 egg yolks
• 1 tbsp vanilla bean paste
3. Add to dry ingredients.
4. Gently fold the egg whites into the batter until just incorporated. Avoid overmixing; small lumps are fine.

Refrigerate the batter for about 20-30 minutes. Make sure the iron is open and on during that 20 minutes so it gets nice and hot. Set up your station. Make your sauce. Make some bacon if you want.

Foster Sauce

IngredientsInstructions
• 2 oz unsalted butter
• 1/4 cup brown sugar
• 1 banana, sliced
1. Caramelize in a pan.
• 2 oz rum, spiced
• 2 tsp lemon zest
• 2 tsp orange zest
• 2 oz lemon juice
• 2 oz orange juice
• 1 tsp salt
2. Add, stir, and reduce.
• 1 oz butter3. Add the remaining butter and stir. once butter melts remove from heat.
• 1/2 tsp cinnamon
• 1/2 tsp clove
• 1/2 tsp nutmeg
4. Finally, add spices.

You can adjust the consistency by adding a little more citrus juice, a splash of heavy cream, or a bit more rum.
