• ½ cup (60 g) pine nuts
• 1 cup (240 mL) olive oil
• 2 oz (60 mL) lemon juice (about 1 large lemon)
• 3 cloves garlic, peeled
• 1 tsp (5 g) salt
• 2 tsp (4 g) freshly ground black pepper
1. Combine all ingredients in a bowl, blender, or food processor. If using an immersion blender, blend directly in the container. Blend just until smooth—over-blending can generate heat that dulls the vibrant green color.
